Banana Nut Cake

School's out! And the magic of summer is back!  I don't know about you but for the years pre-motherhood, when I worked a 9-5, summers just weren't the same. Days spent typing away in an air conditioned office, and a one week vacation didn't cut it. But happily, through the blessing of motherhood, and the advent of school aged kids, like all good things, it's come back.  I'm thankful for the long, hot days with nothing to do but play and be. For the neighborhood kids coming together, for gardens, swimming pools, Ice Cream and Lemonade stands.

Almond Flour, has been the one ingredient that has roused my interest in baking. And because of the excellent quality Cake it produces, sans Gluten, I find myself experimenting on the sweet side; the ultimate goal being to make Desserts that I feel good about giving to my Children.

I usually make this Cake without the Frosting, in a loaf pan, and we eat it throughout the week for Tea. But the addition of Banana Cream Cheese Frosting makes it special and more of a Cake.

It’s super easy to make. We hope you enjoy this nutrient dense Cake as much as we do. 


Organic Ingredients serves 6

  • 3 Over ripe Bananas, browning are great - peeled and chop

  • 2 & 1/4 Cups Almond Flour

  • 2 Tbps. Flax Seeds

  • 2 Handfuls Walnuts

  • 5 Dates, seeds removed, chopped small

  • 1 Tbsps. Vanilla Extract

  • 5 Pastured Eggs

  • 1 Tbsp. Baking Powder

  • 1 Tsp. Allspice, ground 

  • 1 Tsp. Cinnamon, ground

  • 1/3 Cup Maple Syrup

Banana Cream Cheese Frosting

  • 8 Tbsps. Pastured Cream Cheese

  • 8 Tbsps. Pastured Butter 

  • 3/4 Cup Powdered Sugar

  • 1 Ripe Banana

  • 1 Tsp. Vanilla Extract

Throw all the ingredients in a food processor and blitz for 2 minutes. Pour Batter into a greased 9" baking pan, I like to line the center with a round piece of parchment. Bake in a 375F oven for 45 minutes. Remove from oven and place on a cooling rack to cool for 3-4 hours. Use a butter knife to free the Cake from the tin and turn over onto a flat surface. Turn back around and enjoy or frost!

Cake is moist and can be left in a Tupperware at room temperature and enjoyed over the course of the next few days.



To make Cream Cheese frosting, you'll need an electric mixer, hand held is fine. Combine Cream Cheese and Butter in a large bowl and whisk for 1 minute. Add half the amount of Sugar, whisk for a further minute. Add remaining Sugar and banana and continue whisking for another minute or so until smooth.



Apply Frosting onto Cake...watch a video on how to do this if you haven't done it before. It's simple and straightforward. Place frosted Cake in the refrigerator to cool for at least an hour.
