Bircher Muesli (Princess Diana’s favorite breakfast)
This Bircher Muesli is creamy and lightly sweet, with tart apple balancing rich yogurt and raw honey. Soft, soaked Oats form a pudding-like base, while Nuts and Seeds add gentle crunch for a satisfying, nourishing breakfast.
Bircher muesli was originally created in the early 1900s by Max Bircher-Benner, a Swiss doctor who believed deeply in the healing power of whole, raw foods. He developed the dish as part of a therapeutic diet for his patients, emphasizing freshly grated apples, soaked oats, nuts, seeds, and yogurt; foods he felt supported digestion, metabolic health, and vitality. Bircher-Benner championed fiber-rich, enzyme-dense ingredients eaten close to their natural state. More than a century later, bircher muesli remains a delicious example of food as medicine: simple, nourishing, and perfectly balanced for steady energy and gut health.
Bircher Muesli really had its moment in the 90’s. It was my mother’s back to shape breakfast after having each of her four children. And according to Darren McGrady, Princess Diana’s chef at Kensington Palace, this was her go-to breakfast.
It’s so simple to make at home, and you can adjust to your preferences. It can be eaten, cold, room temperature or warmed up. Here’s my favorite way to make it.
Organic Ingredients, serves 2
Soaked Overnight Oats
1.5 Cups Sprouted Rolled Oats
1 Cup A2 Milk/Almond Mylk or Purée’s Cold Pressed Apple Juice
Toppings
2 Tbsps. Shredded Granny Smith Apple
2 Tbsps. Probiotic Rich Bulgarian Yoghurt
1 Tbsp. Walnuts
1 Tbsp. Sliced Almonds
1 Tbsp. Shelled Hemp Seeds
1 Tbsp. Ground Flax
1 Tbsp. Raisins
2 Tbsps. Raw Honey (or less if you've soaked in Apple Juice)
A splash more Milk - to desired consistency
Notes:
You can add Chia seeds, Pecans, Dried Coconut and/or whatever fresh or dried food you like. You could soak the nuts overnight before adding into the Oats for better digestion or try a Nut Butter. Some even like Cocoa Nibs.
Method
Soak the Oats overnight in an airtight container in the refrigerator with your Milk of choice or cold-pressed Apple Juice.
In the morning, add the remaining ingredients and gently mix. Finish with a little more Milk at a time until you reach your desired consistency. Enjoy cold, at room temperature, or gently warmed.
