Chicken Kafta

Chicken Kafta Burgers are delightful little Chicken Patties mixed with fresh Vegetables, Herbs and aromatic Spices. Children love these finger friendly rounds...perfect for picnics, pack lunches or a simple school night dinner. 

Serve with Ketchup and Fries or straight up Middle Eastern, with Hummous and Salad. 


Organic Ingredients:

  • 2 Lbs Minced Pastured Chicken - for best results, have your butcher mince boneless Chicken Thighs

  • 1 Red Bell Pepper, cut roughly

  • 1 Onion, peeled & cut roughly

  • 3 Cloves Garlic, peeled

  • 1 Big bunch Parsley, removed from stems and washed

  • 1 Tsp. Paprika

  • 1 Tsp. Cumin

  • 1/2 Tsp. Turmeric 

  • Sea Salt, to taste 

  • Extra Virgin Olive Oil/Avocado Oil or Ghee for cooking  

Method:

Don't worry about how you chop your Vegetables, as once sautéed, they're going into the food processor. 

Saute Onion in a non stick pan until translucent. Add remaining Vegetables, Parsley and half of the Spices. Cook for 3-4 minutes on medium heat until Vegetables start to soften. Remove from heat and allow to cool for a few minutes. 

Blitz Vegetables in a food processor until all ingredients are finely chopped. Allow to cool to room temperature. 

In a large bowl, mix Vegetables into Minced Chicken using your hands. Add remaining Spices and Salt. Once well combined wash you hards and place a bowl full of Water next to your working station. Wet your hands, and form the mixture into round Patties...get them as uniform as you can. Continue to wet hands between every Patty...washing when they get too sticky, and drying before starting again. Cover Patties with cling film and refrigerate for 30 minutes or until ready to cook. 

At this point you can Grill, Broil, Bake or Fry the Patties. I like to shallow fry to seal, then bake. 

Heat a large non stick pan with a few tablespoons of oil to medium heat. Fry Patties, for a few minutes on each side, until the outside is cooked and you can no longer see pink. Place onto some Kitchen Towels to remove excess Oil. Place Patties on some parchment paper on a baking sheet and pop into a pre heating oven at 400F. Bake for approx. 10 minutes on each side. 

Serve with Ketchup or Hummous, Fries and a Salad.
