Chicken Noodle Soup
A quintessential Chicken Noodle Soup recipe. Simply perfect.
Organic Stock Ingredients:
1 Whole Pastured Chicken
1 Onion, peeled & quartered
2 Celery Sticks, cut in half
A few Black peppercorns
3 Bayleaves
1 Tsp. Ground Turmeric
2 Tbsps. Organic Raw Unfiltered Apple Cider Vinegar
Celtic/Himalayan Pink Sea Salt
10 Cups drinking water
Organic Soup Ingredients: Serves 4-6
8-10 Cups Chicken Stock (see above)
2 Pastured Chicken Breasts, cooked (see above)
2 Large Carrots, peeled and chopped into thin rounds
3 Celery Sticks, washed and chopped into thin crescents
1 Onion, peeled & diced small as you can6 Cloves Garlic, peeled & crushed in a pestle & mortar
1 Bunch Parsley, washed and de-stemmed and chopped finely
Wide Egg Noodles
Celtic Sea Salt & Black Pepper
Extra Virgin Olive Oil, for cooking
Make the Stock (3 hours for added health benefits)
Place Chicken and stock ingredients in a stainless steel pot. Add 8 Cups of cold drinking Water. Bring to a boil. Remove Chicken Scum from the top of the pot using a spoon. Lower to a simmer, cover and leave to bubble away for 3 hours. Switch heat off, let sit for another 20 minutes in the pot. Remove Chicken from Stock and allow to cool. Remove Skin & Bones, use Breast for this recipe and reserve the Legs and Thighs for something else. Chop Chicken into bite size pieces. Sift the Chicken Stock with a strainer into another pot, discarding anything that isn’t liquid.
Make the Soup
Bring a few tablespoons of Olive Oil to medium heat in a large stainless steel pot. Add Onions and sauté for 4 minutes, add Garlic, Carrots and Celery and stir for a minute. Season with Salt to taste. Add 8 - 10 Cups Chicken Stock and bring to a boil. Once boiling, cover and reduce heat to a medium-low simmer. Cook for approx. 30 minutes or until carrots are tender. Remove from heat. Add in Chicken and Parsley. Season with Salt & Pepper to taste. Cook your Egg Noodles separately until Al Dente. To serve, place your Soup in a bowl, add a handful of cooked Noodles and garnish with Parsley.
