Sheet Pan Mediterranean Halibut
This magnificent recipe comes together swimmingly, in no time, and is baked in one pan. A weeknight dinner extraordinaire. Thinly sliced Potatoes are roasted first, and the robust and succulent Halibut is added towards the end. The flavorful, bright and zesty sauce is made with Tomatoes, Red Chili, Cilantro, Garlic and Lemon with toasted Coriander and Cumin Seeds and a touch of Saffron. Simple, remarkable.
For this recipe, you’ll need a quarter baking sheet, 13 x 9 inches.
Organic Ingredients, serves 4
1.5 Lbs Halibut Fillet, cut into 4 pieces
3 Large Russet Potatoes, peeled and cut into thin rounds
Celtic Sea Salt
Cracked Black Pepper
For Sauce
5 Campari Tomatoes, diced small
1/2 a Red Chili, deseeded and diced small
5 Cloves Garlic, crushed or minced
1/2 Cup Cilantro, leaves only, packed tightly
Juice of 1 Lemon
1 Tsp. Paprika Powder
1 Tsp. Whole Coriander Seeds
1 Tsp. Whole Cumin Seeds
2 Droppers Umi Saffron Drops or 1/4 Tsp. Saffron Threads ground into powder and bloomed in a little water
1 Tsp. Celtic Sea Salt
1/2 Cup Extra Virgin Olive Oil
Notes:
Depending on the size of your Potatoes, you may have only enough space for two, but have three on hand in case. Don’t overcrowd your pan with Potatoes; they won’t all cook. Layer as shown in the picture below.
Method
To make the Sauce, toast Cumin and Coriander Seeds in a small pan stove top on medium high heat for a minute or two until you can smell the aroma of the Spices. Remove from heat and crush in a pestle & mortar to a powder. Add Garlic and crush to a paste and add the remaining Sauce Ingredients. Mix well.
Layer Potatoes as pictured below over the base of your baking dish. Spoon 3/4’s of the Sauce on top evenly. Sprinkle 1/2 tsp. Salt and Cracked Black Pepper on top. Bake in a 425f oven for 35 minutes. Try a Potato out, they should be cooked through, if not, cook them a little longer.
Season Halibut Fillets with Salt & Black Pepper.
Remove Potatoes from oven, add seasoned Halibut Fillets on top, spoon the remainder of the Sauce over the Fish, and bake for 12 minutes more.
Remove from oven and remove Skin from Halibut and discard. Serve Halibut Fillet with Potatoes on the side and whatever Vegetable or Salad you have on hand. I love this with a simple Radicchio Salad or lightly steamed Broccolini.

Peel and chop Russet Potato into thin rounds, like so.
Layer Potatoes over the base of your baking dish, like so.

Remove from oven and remove Skin from Halibut and discard.
Serve Halibut Fillet with Potatoes on the side and whatever Vegetable or Salad you have on hand.
