Shish Tawook

Shish Tawook, are Lebanese style Chicken Skewers. Marinated in Yogurt and Middle - Eastern flavors this dish is delicious, easy to make and sure to be a hit with everyone at your dinner table.


Organic Ingredients serves 6

  • 3 Pastured Chicken Breasts, cut into cubes

  • 12-14 Bamboo Sticks (small) - pre - soak in water for 30 minutes

  • A few Tbsps. Extra Virging Olive Oil/Avocado Oil for cooking

  • Parchment Paper

Marinade

  • 2 Heaped (as big as you can) Tsp. Tomato Paste

  • 3 Heaped (as big as you can) Tbsps. Greek Yogurt

  • 2 Heaped Tbsps. Harissa

  • 1 Tsp. of the following Ground Spices: Paprika, Coriander, Cumin

  • 1/2 Tsp. Nutmeg Powder

  • 1/2 Tsp. Turmeric Powder

  • 1 1/2 Tsp. Sea Salt

  • 6 Cloves Garlic, peeled & crushed in a pestle & mortar

  • Juice of 1 Lemon

Tahini Sauce for serving (optional)

  • 2 Tbsps. Room temperature Tahini (Sesame Paste)

  • Juice of 1 Lemon

  • Water, about 1/2 a cup

  • Celtic Sea Salt to taste (approx. 1/4 tsp.)

  • 1 Tbsp. freshly chopped Parsley, leaves only

Method

Mix your Marinade ingredients together, and then mix in with Chicken. To Skewer your Chicken, place approx. 5 cubes of Chicken onto each Skewer. Place onto a platter and cover with cling film and refrigerate until ready to cook. I usually do this in the morning to cook before dinner. Reserve your left over Marinade to use later during the cooking process. Place leftover Marinade in a Tupperware and refrigerate.



When ready to cook, heat your pan with your Cooking Oil until hot. On medium-high heat cook your Chicken for approx. 2 minutes per side, and then place onto a baking sheet lined with Parchment Paper. Brush your Skewers with the remaining Marinade on both sides. Finish Skewers in a 400F oven for 7 minutes turning once halfway. Alternatively, you could cook them stove top until cooked through, omitting the oven, or cook them on a grill.

To make Tahini Sauce, in a large bowl and a small whisk, mix Tahini with Water, adding it bit by bit until smooth. Add in Lemon and Salt to taste. Add a littlemore Water if needed. Garnish with Parsley.


Served with French Fries, Pita Bread, Pickles, Tomatoes, Herbs and Hummous, ready to be wrapped up.

Served with Saffron Rice, Greek Yogurt and a Middle Eastern Style Salad.
