Chocolate chip cookie pot

Make your own Chocolate Chip Cookie Pot is a fun, quick and simple dessert to have your kids make on their own. Warm, gooey, chocolatey and delicious; a revered playdate activity to do with friends in our house.

Each child will need a ramekin, a spoon, a spatula and the ingredients below.


Organic Ingredients

  • 1 Tbsp. Pastured Butter, room temp.

  • 1 Egg Yolk

  • 1 Tbsp. Coconut Sugar

  • 1 Heaped Tbsp. Spelt Flour

  • 1 Pinch Baking Soda, approx. 1/8 of a tsp.

  • 2 Heaped Tsps. Chocolate Chips, or Chocolate chopped into small pieces (53% Cocoa approx.)

  • A tiny sprinkling of good quality Salt

Method

Mix Butter and Coconut Sugar with your spoon, as well as you can. Add Egg Yolk and stir until smooth. Add Spelt Flour and Baking Soda and stir until just incorporated; don’t over stir. Add 1 tsp. or half of your Chocolate Chips and stir. Refrigerate for 10 minutes and pre-heat your oven to 350f. Remove from fridge and using a spatula bring any cookie dough down from the sides of your ramekin into your cookie dough and flatten to the top of your dough so that it’s even. Add the rest of the Chocolate Chips on top. Bake for 13 minutes. Remove from oven, sprinkle Salt on top and leave to rest for 2-3 minutes before devouring. Have the kids be careful not to touch the ramekins while they eat; I wrap them in a kitchen towel.
