Spinach Cesar

Spinach is rich in vitamins, folic acid and iron. It’s peak season is winter, as it becomes sweeter and tastier grown in the cold season when exposed to frost. Spinach Cesar is the perfect winter time Salad; rich and decadent, with Bacon instead of Croutons. Heavy on the Bacon, Parmesan, Peppercorns and Dressing for a satisfying winter’s lunch.


Organic Ingredients for 2 main course size salads

  • Approx. 6 Cups Spinach, leaves only, washed and dried

  • 8 Rashers Turkey Bacon, cooked until crisp and chopped into bite size squares

  • 4 Tbsps. Grated Parmesan Cheese

  • 2 Tsp. Black Peppercorns, crushed in a pestle & mortar

Cesar Dressing

  • 6 Anchovy Fillets

  • 2 Cloves Garlic, peeled

  • 1 Tbsp. Dijon Mustard

  • 2 Tbsp. Mayonnaise

  • 2 Tbsp. Apple Cider Vinegar

  • 1/2 Cup Extra Virgin Olive Oil

  • 1/4 Tsp. Sea Salt

  • 1/4 Tsp. Black Pepper

Method:

To make Cesar Dressing, in a food processor, blitz Anchovies, Garlic, Mustard, Vinegar, Salt and Pepper for 2 minutes. Add in the Mayonnaise and blitz for a further minute. Slowly, add the Olive Oil through the top as you continue to process. Pour dressing into a serving bowl. 

Divide Spinach between two bowls. Top with Turkey Bacon; four Rashers each, chopped. Top with Grated Parmesan, approx 2 tbsp. each. Top with crushed Black Peppercorns, approx. 1 tsp. each. Dollop Cesar Dressing on top, approx. 2 tbsp. per bowl, and mix well. Garnish with a sprinkle more Parmesan and Black Pepper and serve.
