Cooling Watermelon Feta Salad

Ayurvedic tradition teaches us that different foods (and activities) can have heating and cooling effects on the body. As we lean into the hot summer months we can look to our ancestors and the wisdom they left us. Foods like watermelon, mint, cucumbers, goats cheese and aloe vera were relied upon to help cool down. “Cooling foods are those that are thought to help by lowering your body temperature and helping you cope with stressors. They help do this in part by promoting hydration, supporting digestive processes and also encouraging sweating/perspiration in some cases. Some are also capable of helping regulate blood sugar and blood pressure due to containing electrolytes.” Source

Today’s recipe is from my dear friend Sophie who served this to us one beautiful summers night in her garden in Antibes among her lavender and verbena plants and the best of friends.

Begin by selecting a perfect watermelon, surprisingly that’s one with a large yellow ‘resting’ spot and scratches on it. More info here. 


Organic Ingredients Serves 1

  • 4 Cups Cold Watermelon from the fridge, cut into bite sized cubes

  • 1 Cup Grass fed Feta Cheese, cut into bite size cubes about 1/2 the size of your Watermelon

  • 1/2 Cup Kalamata Olives, pitted

  • 1 Tbsp. Homegrown fresh Basil, leaves only, roughly chopped

  • 1 Tbsp. Homegrown fresh Mint, leaves only, roughly chopped

  • 1 Tbsp. Homegrown fresh Parsley, leaves only, roughly chopped

  • 2 Tbsps. Extra Virgin Olive Oil

  • Method

Mix your cold Watermelon with the rest of the ingredients and enjoy. You could add a squeeze of Lime, and Salt & Pepper if you feel like it needs it.
