Smoked Trout &amp; Grapefruit Salad</a>

Todays lunch is one of my favorite Salads from childhood. I am thankful to my mother and her arsenal of delicious Salad Recipes of which the flavors linger till today. Healthy, fresh, nutritious and easy to make, the workings of a perfect family meal. Sammy enjoyed preparing this immensely; learning the importance of presentation, and how we eat with our eyes as well as our tummies. 


Organic Ingredients

  • 6 Cups Salad Greens, whatever kind you like, washed + dried

  • 2 Cups Green Beans, lightly steamed

  • 3 Fillets Smoked Wild Trout - remove skin and break into bite size pieces using your fingers.

  • 3 Grapefruits - peel & then peel again to remove white skin. Chop into bite size pieces.

  • 1 Cup Pine Nuts - roast until they start to turn brown.

Dressing

  • Juice of Half a Grapefruit

  • Juice of 1 Lemon

  • 2 Tablespoons Extra Virgin Olive Oil

  • Celtic Sea Salt, to taste 


Cover the plate with Greens and Green Beans, laying the Green Beans around the edges like a train track

Remove skin from trout and break into small pieces with your fingers

Lay Grapefruit round the edge of the 'tracks'

Place Trout in the middle of the Beans and sprinkle Pine Nuts round the 'Green Parts'
